Spanish Tortilla de Patatas

(Spanish Omelet)


Spanish Tortilla de Patatas, 

this is a classic anywhere you go, guaranteed to be a crowd pleaser and it is super easy to make.  The traditional tortilla de patatas is basically an egg and potato omelet but if you are feeling adventurous you can always add some other ingredients such as chorizo, let your imagination run wild!

Ingredients needed:

  • 1 pounds of potatoes
  • 1 large onion
  • 4 eggs
  • Olive oil
  • Salt to taste

Cooking Instructions

Peel and slice the potatoes thinly

Peel and slice the onions thinly

Heat up the olive oil in a large pan, once the oil is hot add the onions and the potatoes cook on high for the first few minutes then lower the heat and let them cook slowly stirring them once in a while

In a separate bowl beat the eggs and add a pinch of salt (to taste)

Drain the oil out of the onions and potatoes and add them to the eggs mixing well so that the egg coats them thoroughly

In a non stick skillet add a little bit olive oil pour the potato, onion, egg mixture and cook the egg until it sets up, first on high heat then over low heat

Turn the tortilla over so that it browns on both sides, it can be served hot or cold...
