Spanish Almendrados Recipe

(Almond Cookies)

Spanish Almendrados are typical pastries from Aragón, elaborated with flour, oil, eggs, sugar and almonds (thus the name). They are mostly eaten at Christmas time but they are so light and delicious that you should enjoy them all year round....

Ingredients needed:

  • 250 grams of blanched almonds
  • 200 grams of sugar
  • 2 egg whites

Cooking Instructions

Chop the almonds leaving about 10 of them whole

Preheat the over to 200° degrees

Beat the egg whites " a punto de nieve" until stiff and glossy

Mix the chopped almonds, egg whites and sugar

With a spoon place the mix on to a baking pan and place a half an almond (of the ones we left whole) in the middle of each cookie

Place the baking pan in the oven, lower the temperature to 180° degrees and bake for 20 minutes

Take them out of the oven, let them cool and enjoy....
