Fabada Recipe


Fabada recipe...Spanish fabada typically from Asturias it is a hearty, healthy and robust bean and pork stew perfect for a cold day.

Ingredients needed:

  • 2 pounds of dry fava beans
  • 1/4 extra virgin olive oil
  • pinch of saffron threads
  • 1 tb hot pimentón (hot Spanish paprika)
  • 1 head of garlic cut in half
  • 1 smoke ham hock
  • 1 pound of slab bacon
  • 1 pound of Spanish chorizo
  • 1 pound of blood sausage (Morcilla)
  • 1 onion cut in half
  • Salt and pepper to taste

Cooking Instructions

Drain the beans place them in a large pot and add water to cover them by about 2 inches and bring them to a boil

Once boiling skim the foam and lower heat to a simmer, add the olive oil, saffron, pimentón, garlic, ham hock and bacon.

Simmer for an hour adding water if necessary to keep the beans covered, add the chorizo, morcilla and onion and simmer for another couple of hours or until beans are very soft.  Note.  keep adding water if necessary to keep the beans and the meat covered.

Remove from heat, remove the meats and let cool slightly

Remove the meat from the ham hock and shred into bite size pieces, cut the bacon and slice the sausages.

Discard the onion and garlic

Serve beans into bowls and add the meats on top
