(Fried Potatoes with Brava Sauce)

 

Spanish Patatas Bravas



are one of the most popular tapas in any bar in Spain.  Who does not love some fried potatoes with a nice spicy hot tomato based sauce?

Ingredients needed:

  • 2 pounds of potatoes
  • 4 large ripe tomatoes diced
  • 1 finely chopped onion
  • 1 clove of garlic finely chopped
  • Olive oil
  • 1 teaspoon of flour
  • 1 or 2 teaspoons of pimentón (hot paprika)
  • 3 dried chilies
  • 1 teaspoon of Vinegar
  • Salt and pepper to taste

Cooking Instructions

Peel the potatoes and cut them up in little squares, wash them and dry them thoroughly

Pour olive oil in a large pan and heat it up, once oil is hot add the potatoes and fry them in the oil until golden brown

Once potatoes are golden brown take them out of the oil and place them  on a paper towel so that the excess oil is absorbed and cover them to keep them warm

In a smaller pan add some olive oil, add the garlic and the onions and the dried chilies cook until onions become transparent then add the paprika

Once the paprika has been added stir well, add the tomatoes and let the sauce simmer for 5 - 10 minutes, add the vinegar and the flour and continue to stir and let it reduce for about 15 minutes

After the sauce is reduced mix it either in a food blender or with a hand held blender

Finally take the sauce and pour over the fried potatoes,

I guarantee  this tapa will be a crowd pleaser, obviously if you like a lot of heat you can always increase the amount of paprika and dried chilies and make the crowd scream for mercy.....
