Spanish Croquetas de Jamon

(Spanish Ham Croquettes)

 

Spanish Croquetas de Jamon, 



this is a classic anywhere you go, guaranteed to be a crowd pleaser.  I am giving you the recipe for the ham croquetas but these can be made with eggs, chicken, tuna, just about anything you heart desires....My great aunt used to make these when I was growing up and my cousins and I could never get enough of them....

Ingredients needed:

  • 50 grams of very finely minced ham
  • 3/4 liter of whole milk
  • 40 grams of butter
  • 1 egg
  • 200 grams of bread crumbs
  • 9 tablespoon of flour
  • White pepper
  • Nutmeg

 

Cooking Instructions

In a large skillet add the butter once melted add the finely minced ham

Add 8 tablespoons of flour, mix well and slowly add the cold milk while continuously stirring, add the nutmeg, salt and white pepper to taste

Cook over medium heat, stirring constantly until the sauce is thickened and smooth

Pour the mixture into a glass rectangular pan, cover it and let it cool for at least six hours.   You can always prepare the mixture the day before and keep it refrigerated till you are ready to fry the croquetas

Beat the egg, add 1 tablespoon of flour and three tablespoons of water

Prepare two separate bowls:  one with the egg  mixture and the other one with the bread crumbs

Take the mixture and divide it into 1 inch croquettes and set them on a plate without touching each other

Pour olive oil into a pan (enough to cover 1/2 inch) and heat it up for frying.  Dip the croquetas into the eggs and then into the bread crumbs covering them completely

Place the croquetas into the hot oil and fry quickly turning them several times until golden brown

Remove the croquetas and place them in a paper towel to absorb the excess oil

Serve them immediately! and watch them disappear from the plate...
